As far as I know, there are no commercially available gigapixel cameras. The highest resolution digital camera back I am aware of is the Leaf Aptus 80 megapixel back for 2 1/4" format cameras like the Mamiya 645 (http://www.leaf-photography.com/products.asp).
Gigapixel photos are currently been generated using regular DSLR's or even point and shoot digital cameras and then stitching them together using computer software. For example here is my first near-gigapan taken using a Nikon D300s DSLR on a Gigapan Pro automated head (http://gigapansystems.com/):
