I don't have a copy of the paper with me, but Eric Stauffer has an article with an abstract at:

It's entitled: A Review of the Analysis of Vegetable Oil Residues from Fire Debris Samples: Analytical Scheme, Interpretation of the Results, and Future Needs

Also, there was some work being done this past year by the folks in Australia that deals with this sort of analysis and how to interpret the amounts of certain fats present in the samples. A paper was presented on it at their International Conference in September in Sydney.

And like always, Vyto's "Ignition Handbook" and the SFPE Handbook discuss self heating of various compounds including olive oil.
