NoteTaker HD is what I am using and the majority of people I meet at lab exams are using. I use it in conjunction with PDF Expert app and between the two, I am thoroughly impressed. I have been using for several years now without issue.

You can save notes as PDF and either email it, send via wifi, or even export and save to a USB drive.
