Years ago, and I rather not say how many year ago, I conducted some testing of the same oil you mentioned. I also used some different oils. The results of my experiments, which I do not consider scientific in and of themselves, gave me a range of temperatures. The testing was conducted using both aluminum and steel pots. These were place on 8” element of an electric residential stove. The canola oil’s ignition took place in the range of 781ºC and 810ºC. Olive oil was higher in the range of 795ºC to 825ºC. The vegetable oil was lower in the range of 750ºC and 785ºC.
Long after I did my testing, I saw where test was conducted by a student at the University of Maryland, Department of Fire Protection Engineering in 2010. Surprisingly, his temperature were in line with what I determined years before. Here is the site where I believe you can find his study. It will be more reliable than what I did.
